I was in a frenzy studying for my exam for Nutrition! I’ve been studying like a madman for days, but trying to relax about it. In the middle of studying this morning I needed a mental break, and a serious snack (those waffles and egg whites didn’t cut it I guess!). I made- the most delicious thing ever- a pita with roasted red pepper hummus and a slice of vegetarian cheddar cheese, heated in the microwave for 30 seconds. A hummus-and-cheddar quesadilla, or should I say “pita-dilla” 😉 ?! It’s an easy, tasty snack to keep you pluggin’ !
