Peanut Butter Banana Flax Pancakes

Ahhhh these pancakes are fluffy, tasty and filling. I made them this morning with Aunt Jemima’s Whole Wheat Pancake Mix, but I spiced up the recipe with 2 tablespoons of flax (for one serving- Gotta get that flax in!). Once the mixture was ready I put some in the frying pan, topped it with sliced banana, and a glob of peanut butter in the center. The banana gets warmer and sweeter by cooking it with the pancake, and the peanut butter in the center melts when you take your first bite! The flax and peanut butter definitely help to fill you up. I topped them with a little bit of syrup, and sipped on green tea with lemon. What I’m dying to try is pumpkin pancakes! Pumpkin is probably my favorite Fall food item.
